We’re about to ring in a new year with this easy to throw together pear and pomegranate champagne cocktail! And before you even ask, here’s your guide to buying vegan bubbly.

What an incredible year it’s been! If I can just brag for a moment… this blog grew exponentially in under 12 months and I managed to launch a YouTube channel this year as well that’s now reached over 53,000 subscribers. Well then, shake up this easy but fancy champagne cocktail tonight just before the clock strikes twelve and make a wish!

pear & pomegranate champagne cocktail

This cocktail is pretty and delicious, perfect for any kind of fancy party! It’s made with pear, thyme, pomegranates, St-Germain, and bubbly.

Ingredients

  • 1 very ripe pear, peeled and diced
  • 1 thyme sprig
  • 4 oz St-Germain (or substitute elderflower syrup)
  • 1 C crushed ice
  • 2 tbsp pomegranate seeds
  • 1 bottle champagne (about 4 oz per glass)

Instructions

  1. To a cocktail shaker add the diced pear, thyme, St-Germain and muddle really well until pulpy.

  2. Add crushed ice and place the lid on the cocktail shaker. Shake well.
  3. Strain into glasses with a few pomegranate seeds at the bottom of each.
  4. Just before serving, add champagne to the glass.
