It was Chat GPT who created this creamy cucumber noodle bowl! That’s right. I plugged in the few ingredients I had on hand and in a matter of seconds it delivered this. We’re all aware that most of our jobs will be performed at some level by AI in the near future correct? Sheesh!

- 1/2 C unsweetened plain cashew yogurt
- 1 tbsp tamari or soy sauce
- 1 tbsp sesame oil
- 1/2 tsp garlic powder
- 1/2 tsp ginger powder
- 1/4 C chopped scallions or finely chopped red onion
- 1/4 C chopped cilantro
- toasted sesame seeds, as garnish
Cook the noodles according to package instructions and set aside.
In a mixing bowl, whisk together the cashew yogurt, tamari or soy sauce, sesame oil, garlic powder, and ginger powder until well combined.
