    I’m so pumped to share these vegan chocolate chip banana waffles! They're part of this week's video for vegan waffles 2 ways! Both of these ideas next level tasty.     If you crave a sweet waffle experience, this is the recipe for you! I incorporated bananas and chocolate chips in the batter, and also included them while serving! Drizzle these bad boys with a generous serving of maple syrup and call it a day.

    Ingredients

    waffle batter

    • 1 banana, mashed
    • 1 ½ C all-purpose flour
    • 1 teaspoon baking powder
    • 1 teaspoon cinnamon
    • ½ teaspoon sea salt
    • 1 ½ C nondairy milk
    • ¼ C melted butter
    • ½ C vegan chocolate chips

    serve with

    • banana slices
    • vegan chocolate chips
    • maple syrup

    Instructions

    • Turn on your waffle iron to heat up.
    • Mash the banana in a large mixing bowl.
    • Add the remaining ingredients and fold together with a spatula to combine. Do not over mix, small lumps in the batter are fine.
    • Spray the waffle iron on both sides with a light coating of oil. Pour half the batter in the centre and spread it out to the edges. Close the lid. One batch will take between 7 to 9 minutes to cook through. It all depends on the waffle iron brand but a good sign is when there is no more steam coming out the sides of the waffle iron.
    • Remove the waffles with a fork or a skewer from the waffle iron onto a wire rack. Flip them a couple of times to let them cool.  Placing them on a wire rack will allow air to circulate around the waffles so they remain crispy.
    • Serve with extra banana slices, chocolate chips, and maple syrup.

    Notes

    If you have left over waffles you can re-heat them in the waffle iron to get them crisp again before serving! Check out the waffle iron I purchased from Hudson's Bay!
