    Choose one: ice cream or slushies! Can't decide? What if I told you these fizzy watermelon floats were BOTH? If I were a kid, I probably would have had to choose one or the other (boo!). But now that I'm an adult, I have the luxury of choosing BOTH, and so can you! It's hot hot HOT this summer and I'm constantly looking for ways to cool off. And I don't mean with fans and ice cubes... I mean jumping in the kitchen and getting creative! You might be familiar with my watermelon icebergs which are ridiculously refreshing. Think of these fizzy watermelon floats as a version for the kid at heart in all of us!

    Don't they just look like heaven in a glass?! They're truly the best way to feel refreshed on a hot summer day! They're far less sweet than your traditional soda float, but will bring on the nostalgia just the same. They have four easy ingredients and take 10 minutes to whip up for you and a pal! Or a double serving for yourself... I won't blame you. They're THAT good, and I may or may not have done that myself... don't judge!

    There's a new ice cream float in town! Cool off with this fizzy combination of watermelon and vegan coconut ice cream.

    Ingredients

    • 1 ½ C cubed watermelon
    • 1 C frozen strawberries
    • 2 large scoops vegan vanilla coconut ice cream
    • 1 C sparkling lime flavoured water (or sparkling water with fresh lime juice)

    Instructions

    • In a blender, combine the watermelon and strawberries until smooth. 
    • Fill about a quarter of your glass with the slush, then add ice cream, top with sparkling water until nearly full, and add a little bit more slush on top. Serve immediately!
