We made this recipe to blow up the internet on national guacamole day, but in our opinion everyday should be guacamole day! This recipe is so easy we didn't include exact measurements for the ingredients. You can make as little or as much as you need!
taco filling ingredients:
vegan beefless ground round
vegetable oil (for cooking the ground round)
vegan cheese shreds
red onion, finely chopped
soft flour or corn tortillas
crunchy corn tortillas
vegan sour cream
Brown the vegan beefless ground round in a pan over medium heat with a bit of vegetable oil (your choice). Once it's partially cooked add vegan cheddar shreds all over the top and place a lid on the pan for a few minutes to let it melt. Once melted, keep the lid on to stay warm, but remove the pan from the heat
Then prepare guacamole. Spread some guacamole on the entire surface of a soft tortilla and place a crunchy corn tortilla on top. Gently stick the sides to the crunchy tortilla. Add vegan ground round with cheese to the bottom and other toppings as you like on your taco.
