If you’re a dedicated Portlandia fan then you know where the name comes from for my crazy vegan guac tacs! I made this recipe to blow up the internet on National Guacamole Day, but I firmly believe that guacamole should be appreciated every day! These guacamole tacos are crazy and super delicious.
This recipe is so easy I didn’t include exact measurements for the ingredients. You can make as little or as much as you need! I’m seriously upset I didn’t think to wrap a hard shell in a soft one sooner. It keeps all the ingredients easy to bite into, and the guac keeps it all nicely held together.
I also used Earth Island vegan sour cream in this video, but you can make your own cashew sour cream from this hot for food recipe.

Take your taco night to the next level with these crazy vegan guac tacs!
Ingredients
taco filling
- beefless ground round
- vegetable oil (for cooking the ground round)
- vegan cheese shreds
guacamole
- avocado
- lime juice
- finely chopped red onion
- sea salt
- ground black pepper
taco assembly
- soft flour or corn tortillas
- crunchy corn tortillas
- vegan sour cream
- shredded lettuce
- diced tomato
Instructions

Brown the beefless ground round in a pan over medium heat with a vegetable oil of your choice. Once it’s partially cooked, add vegan cheddar shreds all over the top and place a lid on the pan for a few minutes to let it melt. Once melted, keep the lid on to stay warm, but remove the pan from the heat.

Prepare guacamole by combining all ingredients. Spread some guacamole on the entire surface of a soft tortilla and place a crunchy corn tortilla on top. Gently stick the sides to the crunchy tortilla. Add vegan ground round with cheese to the bottom and other toppings as you like on your taco.
