
Coconut and lime go together like peanut butter and jelly! But I was really only eating the lovely combo in warm, savory Thai food. Then it dawned on me. Obviously this would be amazing as an ice cold smoothie in the morning! So with a little help and inspiration from my new Thrive Energy Cookbook I went for it. This is basically coconut key lime pie blended up into a healthy breakfast smoothie.
This goes down easily on its own, but can be spiced up with a sprinkle of homemade hemp granola!
You should know that I never list "organic" in the ingredients because I assume you already know to use organic as much as possible. No worries if that isn't feasible for you - it will still be delicious!

Ingredients
- 1 frozen banana
- 2 kaffir lime leaves, fresh or frozen
- 2 tablespoon unsweetened flaked or shredded coconut
- 3 tablespoon coconut cream
- 1 tablespoon coconut butter
- zest of ½ a lime
- 1 C coconut water
- 1 teaspoon agave nectar
- 1 C ice cubes
Instructions
- Mix all the ingredients together in a high-powered blender.
- It's optional, but how could you not want to top your smoothie with some homemade hemp granola and a little drizzle of agave.
