    When I posted this coconut raspberry smoothie on Instagram, there was a lot of haterade being thrown around because there was no recipe! Well guess what? Making a smoothie is practically the easiest thing on the planet to create, so I don't get why people just don't play around a little more. How do you think I come up with recipes? I play in the kitchen. Anyone can do this.

    I made this again so I could give you a recipe. It's a lot of coconut stuff, but I'm a huge believer that coconut might just cure the world of everything. The day has finally come, and the coconut raspberry smoothie recipe is here for you! You could make it every morning this week if you really want. I'm not stopping you.

    I've said this before, but I'll say it again. Always have a can of coconut cream or full-fat coconut milk handy in the fridge because it separates the cream from the liquid really well.

    Ingredients

    • 1 C frozen raspberries
    • 1 frozen banana
    • 2 tablespoon full-fat coconut milk
    • ¼ C coconut milk water
    • 1 teaspoon coconut oil
    • ¼ C shredded coconut
    • ¾ C nondairy milk
    • 1 pitted medjool date
    • 1 C ice cubes

    Instructions

    • Open the can of coconut milk and scoop out 2 tablespoons of the solid cream for the smoothie. Dig out the rest of the cream and save it for another use, and then use the sludgy liquid from the bottom in the smoothie too. It's approximately ¼ cup of liquid with some chunks of cream in it. Put this and all the remaining ingredients into a high-powered blender and combine until very smooth.
