the coconut raspberry smoothie

When I posted this on instagram there was a lot of haterade being thrown around because there was no recipe! Well guess what? Making a smoothie is practically the easiest thing on planet earth to create so I don’t get why people just don’t play around a little more. How do you think I come up with recipes? I play in the kitchen. Anyone can do this.

When I make smoothies I just throw stuff in my blender and often I forget what I did and how much of everything I used. Of course, it tastes awesome. Then I take a rad photo, and then I want to post it! The end.

But I made this again so I could give you a recipe. It’s a lot of coconut stuff but I’m a huge believer that coconut might just cure the world of everything, so let’s go for

I’ve said this before, but I’ll say it again. Always have a can of coconut cream or full-fat coconut milk handy in the fridge because it separates the cream from the liquid really well.

the coconut raspberry smoothie

Ingredients

  • 1 C frozen raspberries
  • 1 frozen banana
  • 2 tbsp full-fat coconut milk
  • 1/4 C coconut milk water
  • 1 tsp coconut oil
  • 1/4 C shredded coconut
  • 3/4 C nondairy milk
  • 1 pitted medjool date
  • 1 C ice cubes

Instructions

  1. Open the can of coconut milk and scoop out 2 tbsp of the solid cream for the smoothie. Dig out the rest of the cream and save it for another use, and then use the sludgy liquid from the bottom in the smoothie too. It's approx. 1/4 C of liquid with some chunks of cream in it. Put this and all the remaining ingredients into a high-powered blender and combine until very smooth.
