the strawberries & cream smoothie

This smoothie makes a fruity and creamy treat for the morning!

Ingredients

  • 2/3 C coconut cream
  • 1 1/2 C frozen strawberries (about 18 whole strawberries)
  • 1/4 of a beet
  • 2 pitted medjool dates
  • 1 tbsp coconut oil
  • 1 C nondairy milk

Instructions

  1. Combine all the ingredients in a high-powered blender until very smooth.  

  2. You can use any leftover coconut cream for the top, just whip it with a hand mixer to make it extra fluffy.

hot tip: freeze cut up beets, too! Beets are messy and don’t last long, so if you feel like you’re racing against the clock to eat a ton of them, just wash and peel them, cut in quarters, and keep in a container in the freezer for all your smoothie needs.
