Ice cream equals summer. But ice cream makes me sick! Luckily there's an extremely healthy solution to satisfy your ice cream cravings, but not cheat on your beach bod goals! This vegan peanut butter chocolate chip banana ice cream uses frozen bananas as its base. If you're a raw purist, then just replace peanut butter with a raw nut butter of your choice! Either way, you'll think you've died and gone to heaven after you try it.
You can serve this heavenly peanut butter chocolate chip banana ice cream in a bowl or vegan friendly ice cream cone. If you truly can't wait, just eat it directly out of the food processor... I won't judge! If you're feeling especially creative, you can serve it between the cookies in my recipe for the ultimate vegan ice cream sandwich.
vegan peanut butter chocolate chip banana ice cream
Ingredients
- 2 frozen bananas, sliced
- 2 tablespoon natural peanut butter
- 3 tablespoon raw cacao nibs
- pinch sea salt
- drizzle of agave or maple syrup (optional)
Instructions
- Place frozen banana slices in a food processor and run the machine until it resembles a crumb like consistency.
- Add peanut butter, cacao nibs, sea salt, and agave or maple syrup and whiz a little longer until you get a soft serve ice cream consistency.
- You can add so many other things to this frozen banana ice cream base. Try caramelized pecans or candied nuts, almond butter or another favorite nut butter, cinnamon, cardamom, frozen blueberries, chopped dates, candied ginger... the list goes on and on. Get creative!

that's the thing... I don't have an ice cream maker! I don't have time for that kind of thing. haha. no, but I have heard that it takes much longer for it to be ready. These recipes are instant. It's the frozen banana's or fruit that make it the texture of soft serve.
