Here's a clever idea if you just want a small snack or maybe only a taste of guacamole (said no one ever). But maybe you're in a rush and you only have time to stuff half an avocado in your face, say, before yoga or something. This is a recipe for you.... a simple and easy guacamole for one.
1/2 lime, juiced
sea salt & pepper to taste
1 tbsp salsa
Cut avocado in half and use the half without the pit first. Save the pitted half in the fridge. Cut the avocado flesh with a knife in a grid pattern without going through the skin, and then mash with a fork gently.
Squeeze half a lime into the avocado mash and combine with a fork. Add sea salt and pepper to taste and stir a couple times to combine. Dollop with a salsa of your choice and enjoy with your favorite corn chips!
