We told you how obsessed we are with acai bowls after our trip to hawaii and I've finally got around to creating my own at home! It's super easy and really really refreshing and tasty for a morning treat or even a summer dessert.
ingredients (makes 2 small bowls or 1 large):
1 acai smoothie pack
1/2 C frozen blueberries
1/2 C frozen raspberries
1/2 C almond milk
** you could also use coconut water or fresh orange juice, but almond milk gives it a creamier taste
these amounts are to your liking:
agave nectar (or honey if you're not vegan)
Look for these acai smoothie packs in the frozen fruit section of health food stores or whole foods.
Break up the frozen smoothie pack into quarters as best you can while still in the plastic, using a knife or the side of your counter. Remove the plastic and place pieces into a vita-mix or high powered blender and combine with frozen blueberries and raspberries, and almond milk until smooth. Because this is a thick frozen smoothie you'll need to stop and start your blender to push the frozen pieces closer to the bottom to get it well combined. If you have a vitamix use the the baton that comes with it and gently push the fruit closer to the blade while running the blender... carefully!
Empty the frozen acai mixture into your bowls and top with sliced banana, flaked coconut, hemp granola and a drizzle of agave.
