    These easy to make date balls are pure energy! They've got raw cacao, coconut, almonds, tahini, and granola and make a great snack, on-the-go breakfast, or pre-workout nosh. This was something I made WAY back when I started this blog and thought I had to eat mostly raw food as a vegan... my how things have changed! I still very much enjoy these though.

    I pack coconut into a lot of other recipes here on my blog! A few of these date balls for breakfast might not leave you ready to take on the day. I recommend blending up a coconut matcha smoothie for more nutrients and coconut yumminess in the A.M.!

    These make a great snack, breakfast accompaniment, or pre-workout nosh!

    Ingredients

    • 1 ½ C pitted medjool dates
    • 2 C raw whole almonds
    • 2 tablespoon roasted tahini
    • ½ C raw cacao powder
    • ½ C shredded coconut
    • ½ C granola (optional)

    Instructions

    • In a food processor, grind almonds into large crumbs. 
    • Add dates, tahini, cacao, coconut and granola and combine in the food processor until it comes together like a dough. The granola adds a nice crunch, but it's definitely optional. 
    • Roll the mixture into 1-inch balls and refrigerate. 

    Notes

    Store the balls in an air tight container in the fridge. You can easily make these part of your raw food diet by omitting the granola and using raw tahini.
