    It was Sunday morning and in my mind I was all ready to go to yoga. But once I woke up and looked outside I instantly turned to mush and stayed in bed. This has been happening every day since returning from my amazing Costa Rica vacay. But I feel like it's happening to everyone because... winter! If you live somewhere where winter isn't a thing, us Canadians envy you very much. 

    So next time you find yourself giving the finger to your exercise routine, remember that easy vegan breakfasts always have your back. This yummy peanut butter, jam & banana french toast sandwich here to console and comfort you. Plain french toast and PB & J sandwiches are such old news.

    The classic sandwich got a makeover! Peanut butter, bananas and jam officially belong on french toast from now on.

    Ingredients

    • 1 tablespoon ground flax
    • 3 tablespoon water
    • 1 tablespoon chickpea flour
    • 1 teaspoon nutritional yeast
    • ¼ C water
    • ¼ C nondairy milk
    • 1 ½ tablespoon melted vegan butter
    • 2 tablespoon maple syrup
    • ¼ teaspoon cinnamon
    • ⅛ teaspoon sea salt
    • 4 slices whole wheat bread
    • 2-3 tablespoon vegan butter, for frying
    • 1 banana, cut into thin rounds
    • 2-3 tablespoon natural peanut butter
    • 2 tablespoon jam

    Instructions

    • Whisk together ground flax and 3 tablespoons of water in a small bowl until well combined. Set this aside to thicken. 
    • In a larger mixing bowl, whisk together water with chickpea flour, nutritional yeast, melted butter, maple syrup, cinnamon, and sea salt, as well as the thickened flax mixture. Transfer this mixture to a shallow dish that will fit your slices of bread.
    • Heat a large pan over medium. Once the pan is hot, add some vegan butter to coat the bottom of the pan. Dredge 1 piece of bread through the batter so both sides are evenly coated and place the slice in the pan. Fry each piece for 2 to 3 minutes a side until golden brown. Add more vegan butter to the pan for each piece of bread and continue dredging and frying each slice.
    • To assemble the sandwiches, add peanut butter on the bottom of one french toast slice, place sliced banana on the peanut butter, add jam, and top with another french toast slice. Serve immediately.
