It was a fight to the finish for the first (unofficial) vegan burger challenge! Thanks for all your votes, but unfortunately my grilled cheese burger or the ghetto burger as I originally called it, fell short against Lauren's smoked gouda mushroom chard masterpiece. I still stand by this creation though because it's gutsy and it does taste amazing despite being a little messy. Just wear a cool bib!
This recipe is just for the toppings and grilled cheese "buns". We suggest starting with a grilled veggie patty of your choice (we used gardein beefless burgers) and be sure to smother it in bbq sauce while cooking.
ingredients (for 1 burger):
4 slices bread
2 slices daiya cheddar style slices
2 tbsp vegan butter
sriracha (or hot sauce)
Cut circles out of the 4 slices of bread approximately the same size as the veggie burger patty. Butter one side of each bread circle and assemble 2 grilled cheese sandwiches with the cheddar slices. Heat these in a pan over medium heat until golden brown on the outside.
Assemble with one grilled cheese as your bottom "bun", spread some vegan mayo on the inside, then add the veggie burger patty, tomato slices, pickle slices, and lettuce. Mix 2 parts ketchup and 1 part sriracha for the spicy ketchup and spread that on the inside of the top grilled cheese "bun" and place on top.
