vegan chocolate chip banana waffles

For a sweet brunch, try these crispy chocolate chip banana waffles. They’re even better if you can cozy up in bed with the whole stack!

waffle batter

  • 1 banana, mashed
  • 1 1/2 C all-purpose flour
  • 1 tsp baking powder
  • 1 tsp cinnamon
  • 1/2 tsp sea salt
  • 1 1/2 C nondairy milk
  • 1/4 C melted butter
  • 1/2 C vegan chocolate chips

  1. Turn on your waffle iron to heat up.
  2. Mash the banana in a large mixing bowl.
  3. Add the remaining ingredients and fold together with a spatula to combine. Do not over mix, small lumps in the batter are fine.
  4. Spray the waffle iron on both sides with a light coating of oil. Pour half the batter in the centre and spread it out to the edges. Close the lid. One batch will take between 7 to 9 minutes to cook through. It all depends on the waffle iron brand but a good sign is when there is no more steam coming out the sides of the waffle iron.

  5. Remove the waffles with a fork or a skewer from the waffle iron onto a wire rack. Flip them a couple of times to let them cool.  Placing them on a wire rack will allow air to circulate around the waffles so they remain crispy.

  6. Serve with extra banana slices, chocolate chips, and maple syrup.

Recipe Notes

If you have left over waffles you can re-heat them in the waffle iron to get them crisp again before serving! Check out the waffle iron I purchased from Hudson's Bay!
