Add the remaining ingredients and fold together with a spatula to combine. Do not over mix, small lumps in the batter are fine.
Spray the waffle iron on both sides with a light coating of oil. Pour half the batter in the centre and spread it out to the edges. Close the lid. One batch will take between 7 to 9 minutes to cook through. It all depends on the waffle iron brand but a good sign is when there is no more steam coming out the sides of the waffle iron.
Remove the waffles with a fork or a skewer from the waffle iron onto a wire rack. Flip them a couple of times to let them cool. Placing them on a wire rack will allow air to circulate around the waffles so they remain crispy.
Serve with extra banana slices, chocolate chips, and maple syrup.
