This sandwich was created as part of our back-to-school lunch ideas we posted to YouTube recently. We want to make sure you're bringing healthy and tasty lunches to school, especially ones that don't stink up the whole cafeteria! Remember when you would bring tuna to school... thanks Mom!
** makes 4 sandwiches
1 - 15 oz. can chickpeas
1/3 C finely chopped dill pickle
1/3 C finely chopped celery
1/4 C finely chopped red onion
1/3 C vegan mayonnaise
1 tbsp lemon juice
1/2 tsp old bay seasoning
1/4 tsp sea salt
1/4 tsp ground pepper
Drain and rinse the chickpeas. Mash them in a bowl with a potato masher or fork.
Add the remaining ingredients and combine well. Store in the fridge for up to 5 days and make up sandwiches as you need for the week.
We really like topping our chickpea tuna sandwiches with lettuce, tomato, and avocado but feel free to add whatever you like!
