Ingredients

ingredients:

  • 2 1/2 C chopped vegan chik'un
  • we bought 2 x 170 g packages of yves meatless chicken strips
  • 2 tsp coconut oil
  • sea salt & pepper to taste
  • 1/2 C finely chopped celery
  • 1/4 C raisins
  • 1/2 C vegan mayonnaise
  • 1 tsp curry powder
  • 1/4 tsp paprika

Instructions

  1. In a pan heated to medium, brown the chopped chik'un with 2 tsp coconut oil and season with sea salt and ground pepper to taste. You don't have to brown the chik'un but we find it brings out a little more flavour. Allow it to cool before mixing with the remaining ingredients.
  2. Mix the chopped chik'un with the rest of the ingredients in a dish and store in the fridge for up to 5 to 7 days and make up sandwiches as you need for the week.

    My meat loving boyfriend made a sandwich out of this thinking I had started to eat chicken (I have no idea why he’d think that) and he thought it was the most delicious curry salad he’d ever had. I have to admit, it’s the bomb.

    I just made this recipe! Delicious! I added extra raisins and celery! I love the extra crunch and sweetness! This is my first, but definitely not my last HFF recipe!

    this was great! I added a touch of vinegar to cut through the mayo a bit more–awesome (quick!) recipe!
