Coconut and lime go together like peanut butter and jelly! But I was really only eating the lovely couple in warm savoury thai food. Then it dawned on me. Obviously this would be amazing as an ice cold smoothie in the morning! So with a little help and inspiration from my new Thrive Energy Cookbook I went for it.
You should know that I never list "organic" in the ingredients because I assume you already know to use organic as much as possible!
ingredients (1 serving):
1 frozen banana
2 lime leaves (fresh or frozen)
2 tbsp unsweetened flaked or shredded coconut
3 tbsp coconut cream
1 tbsp raw coconut butter
zest of 1/2 a lime
1 C coconut water
1 tsp raw agave nectar
1 C ice cubes
Mix together in a vita-mix or high powered blender. It's optional, but how could you not want to top your smoothie with some hemp seed granola and a little drizzle of agave! This smoothie is heavenly and tastes like dessert, but there's nothing to feel guilty about.
