If you're afraid of eating raw kale, don't be. I'm here to rescue you! The secret is a sea salt massage. Kale is a superfood after all and it deserves your love and attention. Truth is, the more you eat dark leafy green the more your body will crave them. This luscious salad will get you eating kale without complaining!
6 C finely chopped kale, stems removed
1/4 tsp salt
2 tbsp red onion, finely diced
3 tbsp hemp seeds
1 avocado, cubed
1 C cucumber, diced
3 tbsp cold-pressed olive oil
2 tbsp lemon juice
2 cloves garlic, minced
Whisk together olive oil, lemon juice, and minced garlic.
Remove the stems from your kale and finely chop the leaves with a knife into shreds/ribbons and place in bowl. Massage sea salt into the kale with your hands for 2-3 minutes and you will notice it starting to wilt and bring out moisture. Then toss in dressing and massage a little more.
Combine the remaining ingredients into the dressed kale and toss to combine. Serve immediately.
Kale is a sturdy green and actually benefits from sitting in the fridge with this dressing for a few hours. So if you are taking it for lunch or eating left overs you'll find it doesn't get soggy the way lettuce does.
